A new location of Los Tacos del Pepe has recently opened on McPherson Road in Laredo. The restaurant offers a variety of tacos and dishes distinctive to northeastern Mexico.
Partner Diana Torres, who is originally from Saltillo, Coahuila, and moved to Laredo 20 years ago, told the Laredo Morning Times that she and partner Pepe Gamez started in the restaurant business by selling food for delivery. Torres said the Los Tacos del Pepe concept grew from their experience in the industry and was meant to keep the feel of cantinas from Saltillo while standing out in a city she described as very taco-oriented.
Torres said the first restaurant opened in 2022 under a different name and changed over time. She credited Parminder "Bounty" Gyani with helping the project grow. She said one of the main challenges was building a brand that people would recognize. Torres said the owners are grateful for community support.
